Pennsylvania devotes 22,000 acres to corn crops annually, and is the No. 1 vegetable crop. Most of the harvest goes to fresh roadside farm stands and to grocery stores as well. We rank 11th in the nation for fresh-market sweet corn production. Surprisingly, 600 acres produce corn for frozen, canned or dried products. If you want corn, Pennsylvania’s got it! In the middle of the hot summer months, corn on the cob as an accompaniment to some delectable grilled meat, a salad and maybe some fresh bread equals a perfect meal. Now is the time to make the most of corn on the cob because the availability starts to wane after July. This year, though, many growers blame our saturated spring for a two-week delay in the readiness of sweet corn for sale. The popular corn on the cob is so easy to prepare and grilling the cobs is growing in popularity. For the traditional boil method, peel the husk and silk, submerse in water and bring to a boil for about 6 minutes. To grill, peel back the husk, but leave it attached. Remove the silk and return the husk to hug the cob. Soak like this in cold water for 10 minutes. Grill them for 15 minutes. I like to serve it as is because it looks pretty in the husk, but it’s messy for your dinner companions. For microwave preparation, wrap two husked ears in damp paper towels. Cook them for 7 minutes on high power, turning once as they cook. It’s best to microwave only two at a time. If you need to cook more than two for your meal, microwave them in twos, but reheat for 1 minute all together, just before serving. Place a large griddle or large fry pan over the heat source and drop a bit of clarified butter onto the hot surface. When butter is hot, drop tablespoons of batter onto griddle, leaving about an inch between them. Cook each side for about 2 minutes. Remove to a clean baking pan, and allow to cool slightly.
