I always loved the evening meals when dad, (Charles Orley Troxel) came in from the field. If the meal was not ready he sat at the piano playing by ear and singing at the top of his voice the songs from his childhood. I always thought that it was a shame that nobody got to hear him but us as he had a good voice.

His dad (Charles David Troxel) had been a song leader at the Elmer Church on the North divide. I don’t think he was too impressed by my playing the piano after a couple years of lessons. He played by ear and corded.

2 lbs. of little smokies

1 1/2 c. brown sugar

8 oz. grape jelly

1 lb. bacon

Cut bacon strips in thirds. Wrap each smokie with bacon, securing with toothpicks. Bake at 350 degrees for 20 min. to get some of the grease melted off. Drain and put smokies in a crock pot. Combine brown sugar and jelly; pour over smokies. Cook on high for 2-3 hours.

1/4 c. chopped red onion

1 clove garlic, minced

2 tsp. olive oil

1 med. yellow summer squash, sliced

1 med. zucchini, sliced

1/2 c. fresh mushrooms, sliced

1 med. tomato, cut into wedges

1/2 c. chopped celery

1/2 tsp. lemon juice

1/4 tsp. dried rosemary, crushed

1/4 tsp. dill weed

1/4 tsp. Italian seasoning

1/8 tsp. fennel seed

1/8 tsp. pepper

In a large skillet coated with nonstick cooking spray, sauté onion and garlic in oil until tender. Add the remaining ingredients; gently stir. Cover and cook over medium heat for 5-7 min. or until vegetables are tender.

1/2 c. chopped radishes

1 tbsp. tarragon vinegar

1 tsp. olive oil

1/2 tsp. salt, divided

1/4 tsp. pepper, divided

1/8 tsp. sugar

 In a small bowl, combine cucumber and radishes. In another small bowl, whisk the vinegar, oil and 1/4 tsp. salt, 1/8 tsp. pepper and sugar. Pour over cucumber mixture; toss to coat evenly.
