Southern Fried Chicken
2 cups flour
salt to taste
seasoned pepper to taste
2 eggs
1 / 2 cup (whole) milk
1 whole chicken, cut into serving pieces
3 cups olive oil *
Combine flour and salt and pepper in a large zip-close bag. With a fork, whisk eggs and milk in shallow bowl. Coat chicken pieces generously with egg / milk mixture and put in the bag two flour at a time. Shake to coat with flour, remove and set aside. Using tongs, place chicken in the pan, but do not overlap or pieces of crowd. Be careful, the oil may splatter during frying. Fry about 15 minutes on each side. Turn pieces, cover and cook 10 minutes more, then remove lid and continue cooking until done, about 5 minutes. Cut a piece of bone, if the juices run clear, it's done. Remove from pan and place on a plate covered with paper towels. Keep warm until all the chicken has been fried. For four.
